Sweet Potato, Zucchini and Salami Fritters (Fast Ed)

Ingredients:
2 eggs
1 cup SR Flour
1/2 cup of buttermilk
salt + pepper
3 small Sweet Potato, peeled and coarsely grated
2 large and 1 medium Zucchini, coarsely grated
245g Salami, thinly sliced

Method:
In a bowl add eggs, SR Flour, buttermilk and pinch of salt and pepper.
In another bowl add sweet potato, zucchini, salami, garlic, rosemary and mint leaves.
Add batter and stir through.
On a medium-low pan with a bit of olive oil and turn a couple of times and will be cooked within 5-6 minutes.
Serve with aioli and pesto.
