Fruit Chutney

Ingredients:
3 small red onions, cut into wedges with skin on
1 piece of ginger, julienne
2 garlic cloves, smashed
3 granny smith apples, peeled and diced
1 and 1/2 cups of cherries, leave pips and stalks in/on.
1 cinnamon stick
3 star anise
2 tablespoons of brown sugar
salt and pepper
2 tablespoons of red wine vinegar
a good dash of olive oil
30g butter

Method:
Preheat oven at 180 degrees.
Put all this in a heavy based and spread and mix thoroughly. Cook for 35 to 40 minutes.
